Bistra is a refined expression of high-end French cuisine and an immersive wine experience, set within a carefully reimagined Victorian double-storey shopfront. This project involves thoughtful alterations and additions that respect the building’s heritage character while introducing a contemporary layer of sophistication.

The design is organised around two distinct dining environments, each tailored to a different mode of experience. A more intimate, comfort-driven dining space offers warmth and familiarity, with softer lighting, tactile materials, and a relaxed spatial rhythm that encourages longer, more personal gatherings. In contrast, the primary dining area elevates the experience through heightened detail, refined finishes, and a stronger connection to the curated wine offering.

Original architectural elements are retained and celebrated where possible, forming a rich backdrop to the new interventions. These are complemented by a restrained palette of materials—natural stone, timber, and brass detailing—creating a balance between old and new. The result is a layered, atmospheric interior that reflects both the precision of French culinary tradition and the ritual of fine wine dining.
